Espresso Cheesecake Brownies (TWD)

Melissa of Life in a Peanut Shell chose Espresso Cheesecake Brownies for this week's Tuesdays with Dorie recipe. Her blog is amazing! Wait until you see her cakes. It will make you want to run into your kitchen and create something beautiful of your own.
These were not my favourite brownies. The bottom brownie layer was a bit on the dry side and it didn't have the taste or consistency of an actual brownie ( but please keep in mind that I like my brownies to be extremely fudgy ). My oven has a tendency to over bake thick desserts like bars and brownies when they have more than one layer. I kept this in mind while I made these but my oven decided to throw a hissy fit at the last minute. Needless to say I was disappointed and waited helplessly for the cheese cake layer to finish baking, knowing that the brownie was past it's prime. This recipe has so much potential to be spectacular and I plan on trying it again!

They are easy on the eyes! I love layered desserts for just that reason. The cheesecake layer and the sour cream frosting worked beautifully together. I used mascarpone cheese instead of cream cheese because as usual, I didn't check to see if I had everything I needed before starting. No worries this time though. Mascarpone cheese is the little black dress of the baking world. It goes well with just about anything from fancy desserts to basic bars. And it has a wonderful creamy, smooth texture. The colour is a soft ecru that just makes you want to spread it on everything!

The sour cream frosting was so easy to make and it was incredibly good. I liked how the sour cream broke the sweet edge off the confectioners sugar and made it taste like something more complex than just it's two ingredients. Combined with the rich, subltly sweet cheesecake layer, it took on a life of it's own and you had this pleasent mingling of sweet and soft sour in addition to the wonderful texture of baked cheese.
I can only imagine how a moist brownie would have taken this up to a whole new level of decedance. It really was not too bad with my dry bottom layer so I am really curious to see how it would taste when baked perfectly!
