They are easy on the eyes! I love layered desserts for just that reason. The cheesecake layer and the sour cream frosting worked beautifully together. I used mascarpone cheese instead of cream cheese because as usual, I didn't check to see if I had everything I needed before starting. No worries this time though. Mascarpone cheese is the little black dress of the baking world. It goes well with just about anything from fancy desserts to basic bars. And it has a wonderful creamy, smooth texture. The colour is a soft ecru that just makes you want to spread it on everything! The sour cream frosting was so easy to make and it was incredibly good. I liked how the sour cream broke the sweet edge off the confectioners sugar and made it taste like something more complex than just it's two ingredients. Combined with the rich, subltly sweet cheesecake layer, it took on a life of it's own and you had this pleasent mingling of sweet and soft sour in addition to the wonderful texture of baked cheese.
I can only imagine how a moist brownie would have taken this up to a whole new level of decedance. It really was not too bad with my dry bottom layer so I am really curious to see how it would taste when baked perfectly!

Hi Natalia! Thanks, I'm glad to hear that I was not the only baker with this issue. I usually just point the blame at my oven. :p

Those look fantastic! Sounds delicious with the mascarpone:))
I agree they are a bit dry. I love fudgey brownies.
I do believe I will make a note in my book: MASCARPONE. What's not to like?
How To Eat a Cupcake, Thanks! Brownies and bars are so photogenic, No propping up is involved. :)

I really like your new profile picture. I'm so envious of all the baked goods you make. I just wish I had the time-- and the waistline that doesn't expand after just one bite. Great job!
Thank you Ash. :)
Hi Sarah, Anything that has the word sour cream in it makes me want it. All reviews are ignored due to my craving for the stuff. :P
Thanks for visiting!
Debby, Thank you. :) Luckily I have hungry co workers that will eat whatever I bring. Sometimes I feel like the witch from Hansel and Gretel, Trying to fatten up everyone around me. ;P
Beautiful photos, the brownies look wonderful! My brownie layer was a bit dry too, I guess this was a hard one to execute with a temperamental oven (mine is also finicky).
Hi Margot. Our ovens must be related. But at least their sass keeps us on our toes! :) Thanks for visiting!
