Ok, so maybe white chocolate isn't that bad. It can't compete with dark chocolate, but as long as it's holding hands with something spectacular like limes or lemons, I think it has a certain charm. Plus, white chocolate's Wintry wardrobe is perfect for this whimsical time of year.Sorry if you're a bit nauseous from that...I'm trying to play nice with winter. Right now we are being diplomatic, although we've been eyeballing each other a lot lately. Stay civil Winter, après moi le deluge.
Even though these bars would be refreshing on a hot Summer day, I think they fit in perfectly with this season. The white chocolate makes them a bit more cozy. They're not my favourite citrus-inspired bar, but thanks to the chocolate, they do have a unique twist on the traditional recipe. If I made these again, I would add more lime. These are slightly too sweet if your like citrus desserts on the tart side, but if you're like me and surrounded by people who complain that said desserts are never sweet enough for them, then these bars may be just what they're looking for.
White Chocolate Lime Bars
(adapted from the Double Dipped Life)

Crust ingredients
1 cup of all-purpose flour
1/4 cup of sugar
1/3 cup butter, cold and cut into bits
Filling ingredients
3/4 cups of white chocolate chips (reduce for tarter results)
2 eggs, slightly beaten
The zest and juice from 3 limes (5 would be better, especially if you want to cut the sweetness.)
1/4 cup of flour
3/4 cup of sugar
Method
Preheat the oven to 350F. Line a 9-inch square baking pan with foil or parchment paper. Spray/butter lightly.
Prepare the crust: In a medium sized bowl, Whisk together the flour and sugar. With pastry blender or your fingertips, work the butter into the mixture until it resembles coarse crumbs. Press onto the bottom of the prepared pan.
Bake 7 minutes or until lightly browned. Remove from oven and immediately sprinkle with the white chocolate chips. Set aside while you prepare the filling.
Filling: In a medium bowl, whisk together the eggs, lemon juice, lemon peel, flour and sugar. Pour over chips and crust.
Bake 10 minutes or until set (you can touch center and it's springy). *Note: Mine were done in 8 minutes.*
Cool completely before cutting into bars.

A timely recipe since January is the citrus season here and my kitchen is loaded with limes after a rare winter storm knocked them off the tree. But I think your monkey bread will be a bigger hit for my family, they love to pass by something in the kitchen and slice off a piece, with the monkey bread it's ready to grab as they go by, no knife necessary.

What an interesting bar, Valerie! Never would have thought to combine lemon and white chocolate! I'm not overly fond of white chocolate, so not certain this bar is for me, but I sure do love anything lemon!

I've been baking with lime this week too. I know I need the sunny citrus with the onset of cold weather! The combination of white chocolate and lime is intriguing, and I'll keep this recipe in mind.
Wow how amazing does this look! It looks really dense because of that white chocolate. Luckily for me, I have no qualms with the weather so I shall test out how these will be on a summers day ;)

Hey Valerie, I really like good white chocolate sometimes-just not when it's overly sweet. That can ruin it, so I can totally see where the tartness of the limes would be delicious in this application. Yum!
Oh, and that is a very good reason that they should allow you to cook on that boat (smile). So many cooks get lazy about cooking things they don't like or want;-)
