Tuesdays with Dorie: Gingered Carrot Cookies

Carrots are underrated. They should be allowed to spend some time in the lime light because of their diplomatic versatility. I came to this realization as I was enjoying a raw carrot while shredding carrots for this recipe and slicing carrots for a Thai peanut sauce for pasta. These long orange sticks are quite literally Supper Vegetables! And in these cookies they show their generous side by allowing other ingredients to share the lead.


Please don't go into this recipe believing that these cookies will taste like tiny carrot cakes, because they're a bit more complex than a fluffy cake. They have the soft chewy heart of a cookie encased in a perfect, crisp coat. The dough is infused with ground ginger so there is a soft whisper of heat. Joining in on the fun is shredded coconut, toasted pecans, raisins (yikes) and of course, carrots. On their own, these are ideal to enjoy with tea or coffee in the morning. If you dress them up in a drizzle of cream cheese frosting, they become just fancy enough to serve as an after dinner dessert...maybe with some Häagen-Dazs vanilla ice cream.

I really enjoy finding unique cookies and these are a welcome addition to my favourite recipe list. I didn't even mind the wrinkly raisins.

  1. I just happen to have some haagen-Dazs vanilla in my freezer..great suggestion! Your cookies look so delicious with that frosting. I loved this recipe so much I'm making a fresh batch today!

  2. Love your frosting on yours. I did think these tasted like carrot cake, but I'm not a big fan of cake and these were really good. And you are right, the carrot gets overlooked.

  6. Hey Valerie, these sound delicious even with the raisins (smile). I actually like raisins, but I am picky as to what I use them for and such. These sound perfect though. And your use of the icing is really pretty!
    Oh, and I was thinking about carrots last night-so funny. They are underrated for sure...

  13. I love carrots too, but no wrinkly raisins for me! Yours look fantastic with the drizzle. I loved the dough so much that I put it in ice cream. Cream cheese ice cream. Mmm.

  23. Isn't it funny how so many people thought this would be a "so so" cookie" LOVE your icing technique and description - I totally agree. Much more so than a regular carrot cake - people LOVED these. Beautifully photographed!

  24. I had to post again to let you know I made these cookies a few weeks ago. I sort of forgot about it until yesterday, when I ran into someone I had shared them with. She was desperate to get the recipe. She also told two other people how great they were, and now they want the recipe too!
