This week's Tuesdays with Dorie recipe was chosen by Natalie, of Oven Love. Thank you, Natalie, for picking something that turned out to be a pleasant surprise! For as much as I love oatmeal, the thought of an oatmeal-based bread made with applesauce in place of butter, made me think of something dull, dry, and brick-heavy. I could not have been more wrong. These muffins were moist, flavourful and light. Of course it's hard to resist anything topped with nuts, brown sugar, and cinnamon (as an added bonus, the muffin batter contains buttermilk.)
The recipe was intended to be made into a splendid loaf, but since that would have led to a massive carb overload on my part, I quartered the ingredients and made about 4 muffins. I use the word 'about' because the last one was forged out of some desperate bowl scraping in the hope that I could manage just one more. So technically it made 3 1/2 muffins. These were perfect for breakfast, lunch, and dinner.

Carbs be damned, these muffins are too good to get by on only 4. Yet another reason that I love Tuesdays with Dorie: I don't have to write out the recipes! I still type like a chicken pecking at it's food.
