Tuesdays with Dorie: Oatmeal Breakfast Muffins

8/17/10

This week's Tuesdays with Dorie recipe was chosen by Natalie, of Oven Love. Thank you, Natalie, for picking something that turned out to be a pleasant surprise! For as much as I love oatmeal, the thought of an oatmeal-based bread made with applesauce in place of butter, made me think of something dull, dry, and brick-heavy. I could not have been more wrong. These muffins were moist, flavourful and light. Of course it's hard to resist anything topped with nuts, brown sugar, and cinnamon (as an added bonus, the muffin batter contains buttermilk.)

The recipe was intended to be made into a splendid loaf, but since that would have led to a massive carb overload on my part, I quartered the ingredients and made about 4 muffins. I use the word 'about' because the last one was forged out of some desperate bowl scraping in the hope that I could manage just one more. So technically it made 3 1/2 muffins. These were perfect for breakfast, lunch, and dinner.

For the recipe, please visit Natalie's blog! And if you decide to go the muffin route, I highly recommend making the full recipe, or at least half. Carbs be damned, these muffins are too good to get by on only 4. Yet another reason that I love Tuesdays with Dorie: I don't have to write out the recipes! I still type like a chicken pecking at it's food.

These muffins look amazing! I'd love to try halving the recipe to give me seven -- three and a half muffins wouldn't work well in a family of four!

What wonderful looking muffins! I agree - the recipe sounded heavy and . . . kind of unappetizing. What a surprise - a pleasant one. Great job on the math and the extra muffin - who want's only "half" a muffin! :) Beautiful photography!

Hey Valerie, these look great. I've found that applesauce in place of fat can often produce a very moist cake/muffin. And this method is, of course, great for people trying to cut unnecessary fat from the diet. I'm going to check it out...

Oh, and your new header is so nice. Is it new, or am I just blind:)?

Thanks, all!

Stella, you're not blind. I've discovered the dangerously addicting world that is Picnik. I think I spent all weekend playing around on it. :p

I love the new header too, and now I must go figure out what Picnik is.

I don't much like healthy desserts. Desserts are supposed to be sinful ;) But I do make such things sometimes, this looks exactly like how I picture them to be.
