Tuesdays with Dorie: Rustic Fold-Over Pear Torte

This week's Tuesdays with Dorie recipe was selected by Cakelaw, from the lovely blog, Laws of the Kitchen. Normally when following recipes, not having a picture to rely on only adds to the fun. However, I really wanted a photo of this torte before jumping into it. For the life of me I couldn't picture how this was supposed to look. Add to that my irritating habit of over analyzing directions. In this case it was the crust that became the helpless victim of my scrutiny. Did I press it down too far over the batter? Maybe I measured the circumference of the crust incorrectly? Do I have a fun-house ruler? What if all this time I've been wrong about what an inch actually looks like? Luckily the torte had enough with the second guessing and just sorted everything out on it's own.

This is may not be the most beautiful dessert, but it makes up for it by busting out the flavour card. It's filled with juicy pears (I used red anjou,) plump raisins, walnuts, and a soft almond-rum custard. It's much less fussy than the name implies, so please just go with the directions and take them as they are. This would be the perfect dessert for a chilly fall night.

  2. Hi Valerie, thanks for baking along with me this week. I chose this partly because of the mystery of it - I couldn't find anyone who'd made it before, even when I Googled it! You are right - this torte is not a beauty, but she sure tastes good.

  6. That looks scrumptious! Yes, I'm running out of adjectives with you, because everything looks so good! I have a big problem with measurements too--I either ignore them, don't believe them, or just can't envision them. Oh well, this torte, like many of Dorie's recipes, was quite forgiving.

  10. Hey Valerie, this sounds delicious. I love apples, but there is something extra special about their cousin, the pear (smile). Oh, and I think it looks like a pretty dessert-very rustic that top photo is. Rustic is my favorite 'look' by far...!
