Tuesdays with Dorie: Classic Brownies

These are the brownies of childhood memories, and brownies that memories are made of must always have walnuts, always.

When I was little, if the warm smell of baking chocolate and toasted nuts welcomed me when I came home from school, I knew I'd done something right. I would run to the kitchen in my plaid uniform and knee sock (the left one always ended up at my ankle by the end of the day), and gaze with saucer-sized eyes at the pan of brownies cooling on the table. My mom would pour me a glass of cold milk and we would talk about everything and nothing. The fact that I wasn't allowed to have sweets very often made those moments even more precious.

It's been far too long since I've made my mom's brownies, but I found this recipe to be just as luxurious and uncluttered. The only twist was a pinch of cayenne pepper. (Dorie's recipe called for espresso powder, which I tend to inhale before I can actually bake with it.) Aside from a little heat, these were the perfect classic brownies; Fudgy, rich, and bursting with walnuts and memories.

  10. Your brownies look perfect. Love the classics! Was it you I saw ask Jessica how she slice her brownies so nicely? I've learned the trick is to chill the brownies once they're cooled. A couple hours in the fridge and the slice perfectly. (Then you can still serve them room temperature.
