Before I gush over these delightful little cookies, I would like to ask everyone to please keep Niles (my darling, chubby, mild-mannered cat), in your thoughts for the next few days. He was just diagnosed with idiopathic vestibular syndrome. And even though most pets get over this scary-sounding affliction within a week, it breaks my heart to see him stumbling about with his head tilted uncomfortably to the left.
Niles took a trip to the vet yesterday (something that's traumatizing enough on it's own), and was given some anti-nausea pills. But late last night he literally could not take two steps without falling over. So after a long, sleepless night, I took him to the vet, again, where we were both reassured that the disturbing symptoms should pass in the next day or so. Till then I'm supposed to feed him by hand...something Niles and I loathe. The food is placed on a long, thick, tongue depressor (to protect my fingers), and I have to kind of scrape the soft food into his mouth and make sure that he swallows most of it. But Niles, who is surprisingly strong for a house cat, has a way of shaking his head out of my grip and tossing the food everywhere...except into his tummy.
There is now a smelly coating of soft cat food all over the bathroom; it's in the carpet, on the wall, in the sink (and my hair). And I swear that darn can of food that Niles is supposed to finish off in one day, is messing around with some kind of Mary Poppins handbag-like magic, it's endless! (We've only made it 3/4 of the way so far.) O_o
The vet made it look so easy.
If only the bottomless can of food was as irresistible to Niles, as these cookies were to his stressed out, sugar-craving, mom. (He would be better in no time!)
Despite the lime, the cookies are on the sweet side. But that sweetness is what makes them reminiscent of an actual creamsicle. If you want classic creamsicle, feel free to substitute the lime zest and juice with an orange. These cookies are soft and chewy and just plain perfect for summer! A word of caution though; Do not try the dough. Doing so may lead to less cookies and more feelings of shame (with a side of regret). Who can exercise in this heat?

Aww, poor Niles! I hope he will be on the mend soon. As for the cookies, these look scrumptious! I love all the citrus goodness! :)
They look so good and so soft! Yum! Delicious and limey :-). I need a cookie recipe, but I don't have vanilla chips... Should I wait to get them or should I skip and make them chipless? :-)

@Cooking Rookie, You can definitely go chip-less in this recipe. The cookies won't be as sweet, but they'll still delicious. Or, you could also use white chocolate chips. :)

I'm sorry to hear about your pussycat. Our cat was so big and strong that I wouldn't dare put anything in his mouth and when he needed medicine to keep him alive, they made a special ointment from the medicine that I rubbed into his ears twice a day. Apparently it gets absorbed there because there is no fur. It was expensive but he came to love having his ears rubbed because I always fed him straight afterwards. Good luck with Niles.

I feel the same way about clipping the dogs' toe nails! I still can't figure out they do it! Hope Niles is already feeling better.

These have been on my "to bake list" for a while and they are truly delicious! I made the first batch will limes and the second with navel oranges, to make the classic orange creamsicle, and it worked beautifully.
