Ginger-Peach Popsicles

I finally caught up with the a food blogging trend of summer '12. Popsicles!

Although I have an apparent mental block when it comes to the spelling, I'm insanely happy about being able to make my own fruity and most likely, boozy, popsicles! I won these adorbs popsicle molds (yeah, I'm saying adorbs now. Be very afraid) from Chung-Ah, of Damn Delicious. If you have never been to Chung-Ah's scrumptious food blog, you're in for a treat! She has everything, from savory to sweet and the all snack-y stuff in between. Try not to be too mesmerized by the mouth-watering photos or you'll miss her fun stories!

Since this was my first attempt at making popsicles, I wanted to stick with something simple.  So I found something simple and made it complicated by deviating from the recipe. The first "batch" broke apart when I tried to yank pull them out of their molds. I managed to salvage two...both of which fell on the floor when I almost tripped on a cat (the one whom I'm convinced is trying to kill me). For the second attempt, I followed an actual recipe. Oddly enough, good things happen when this happens.

These popsicles taste like August. They're peachy and sweet, but with a soft kiss of ginger...just enough to remind you that the spicy season is on it's way. (I'm in denial too. It's okay.)

If you're new to the world of popsicle making, I found that if you run the frozen molds under warm water for just a few seconds, they will usually slide out in one piece. There's really no need for hysterics. *whistle*


Ginger-Peach Popsicles
makes 4 pop-sic-les [note: The original recipe said that it made 6, but I only managed 4.]

ingredients
2 oz of fresh ginger root, peeled and sliced into thick rounds
1/2 cup water
1/3 cup granulated sugar
2 large, ripe peaches, cut into chunks

method
In a small saucepan, combine the ginger, water, and sugar. Stir everything together and bring to a simmer. Allow the mixture to simmer for about 10 minutes, giving it a good stir every now and then. (The sugar will have dissolved and it should have an almost syrup-like consistency.) Remove the pan from the heat and set it aside to cool. [Note: To speed things up, I put the pan in the refrigerator for a few minutes.]

Once the syrup has reached room temperature, use a sieve to strain it directly into a blender. (You can discard the ginger root.) Add the peach chunks. Blend until the mixture is smooth. Don't worry if you see bits of skin here and there.

Pour the mixture into the molds and freeze for at least 8 hours.

To remove, hold a mold under some warm (not hot) running water for a few seconds. Gently tug on the handle to release the popsicle.

  6. These look fantastic! I have been eating so many peaches, but it's going to be so hot this weekend that a popsicle really would be the ideal way to enjoy them. I love the ginger in them too! I so miss my kitchen--it's been 2 months since I saw it and baked anything, but that just means I'm really looking forward to getting home in 10 days or so!

    These sound wonderful! I love the idea of a hint of ginger with sweet summer peach. Yum!

  9. i had a bad experience making popsicles last time - i couldn't get the popsicle out of the mold and ended up breaking like 2 out of the 4 molds...but now that i know about the water trick i might be ready to tackle the popsicle again - yours just look too delicious and lovely to not try

  10. Would you believe I have pop molds that I have never used? True story. I just made a Ginger Peach jam, and loved the combo. These look scrumptuous. Love the color. I should dig out the molds and make something!
