Greek Yogurt Cake with Lemon Glaze

You may call me Grace. But I might not answer. Years of ballet as a child went crumbling down the sidewalk along with this scrumptious loaf cake/bread. I blamed everything. My house for being so dark that I had to go outside to take pictures, the grey sky which made me stalk out a decent spot of light, the heavy box that I used as a pseudo tripod, my palazzo pants for being so long, myself for being short, my mother for passing down the vertically challenged gene...I could keep going. In the end I know it's all on me.
In my usual frantic rush (my approach to everything), I came home from work, frosted the cake that I had made that morning and tried to snap photos before the daylight disappeared. This was a bad idea for several reasons. A) I was already in a bad mood, B) I was still wearing heels while holding a serrated knife, and C)I was starving. The first and last may have been related. After a few shots I decided that it was too dim and that I should just call it a day and eat the entire loaf cake out of spite (don't ask me how that would have helped, I was hungry at the time and the sliced pieces looked too good). So I gathered the numerous items I had hauled out in one trip and made my way back to the house. In my haste, the heel of my shoe became caught in the hem of my pants as I was going up the steps. The cake took the brunt of the fall. I saved my camera, the stupid box, my face, and for some reason a napkin. All I can say is that at least some chipmunks and squirrels were able to have a feast that night. Stonyfield Farm was kind enough to send me coupons for some of their products. I have been searching around, trying to find a recipe that incorporates Greek yogurt. I wanted something in the form of a loaf cake that contained a ridiculous amount of lemon. I found the perfect recipe with an equally perfect glaze.
I had been dreaming about trying this bread while I was at work. It was easy enough to put together and all it needed was the glaze. Since I was never able to actually try any, I can only say that it looked tantalizing. The yogurt gave it an incredibly moist, almost pound cake-like appearance. And the glaze, which I did try, had the perfect amount of puckery lemon.
So, if anyone decides to make this, Please let me know if it is as wonderful as I had hoped it would be!
Greek Yogurt Cake with Lemon Glaze
(recipe adapted from Baked Perfection)

Ingredients:
  • 1 cup plain Stonyfield Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • Zest of 3 lemons
  • 1/2 tsp. of almond extract
  • ¼ tsp. salt
  • ½ cup melted butter
  • 2 tsp. of baking powder
  • 1 ½ cups all purpose flour

Method:

Preheat the oven to 350F.. Grease and flour a 9 1/4x5 1/4x2 3/4 loaf pan. In a medium bowl, Sift together the baking powder and flour. In a separate large bowl, beat together the granulated sugar, eggs, lemon zest, vanilla extract, salt, and butter. Stir in the yogurt until combined. Add the flour mixture and mix until combined, Do not over mix .Pour the cake batter into the loaf pan and bake for 50 to 55 minutes, or until a toothpick comes out clean. Wait for 10 minutes and carefully remove to a cooling rack. Cool completely before frosting.

Lemon Glaze (recipe adapted from Technicolor Kitchen)

Ingredients:

  • 1 ½ cups of sifted confectioners’ sugar
  • 1 ½ Tbsp. of fresh lemon juice
  • 1 1/2 Tablespoons of cream or milk

Mix the confectioners' sugar and lime juice together until all the lumps are gone and you have a nice smooth glaze. For a tartier flavour, add more juice. If you don't want it as sour, add more cream/milk. Pour over the cool cake. Try not to fall when transporting.

  4. wow! It sounds like a Lucille Ball episode! I have made a similar Yogurt Cake, from Ina Garte, so I am sure this is fantastic! I so understand how it is to chase the light. My husband, gifted me with his expensive professional tripod and tungsten lights. I'm so happy to have a light box this year! Stonyfield sent me coupons, too. I just haven't had a chance to post my recipe. But, I will! LOVE Greek Yogurt for baking. You did a beautiful job with the glaze, BTW.

  6. Oh dear! Oh my! What a day. I've had them too, grins. It's becoming more difficult to find locate the elusive natural light.

    On a brighter note, this loaf looks positively amazing. Look at that perfect texture. I think it's been a while since I've seen a lovelier cake. Well done!

  9. I made this delightful recipe this weekend when my mother was visiting--We used it for dinner the first night and then brought it to a party the second night, serving with mixed berries. It was a success at both.

    I used raw sugar instead of granulated and decreased the amount by about 1/4 C. We also found that we needed to use considerably more lemon juice in the frosting to make it drizzle-able. Will definitely make again! Thank you!
