Tuesdays with Dorie: Chocolate Chunkers

I'm 31. That isn't old, right? Well, please tell that to my contact lens-ravaged eyes. Since I'm as near-sighted as Mr. Magoo, I tend to over wear my contacts to the point that I feel useless without them. Last week I spent 3 minutes talking through the bathroom mirror to what I thought was my cat. Apparently my addiction to neutral toned clothing needs to change along with my eyesight because I had a heart-to-heart with a sweater. And, I was sure that I read this weeks Tuesdays with Dorie recipe to be for Chocolate Chunkers. Upon further inspection, it was actually Chockablock Cookies. They both have have the same initials at least. That's really my only defense on why I made the wrong recipe, Bad eyes. Plus I was away from my computer the last few days and I didn't have time for a redo. :)



It was a tasty mistake, so I won't plead guilty on all charges. These Chocolate Chunkers packed quite a heaping mouthful of nuts, raisins, and chocolate. There were more 'chunks' than actual dough, which gives the illusion that these are substantial, meal-replacing, cookies. In fact they could be considered slightly healthy? No. Well in comparison to previous cookies maybe. Normally I don't care too much for chunky cookies but the raisins gave them a wonderful chew. They almost had an air of a gourmet candy bar. The happy kind that won't make you feel like you have to spend the next day running it off!

The results sound almost the same as Chocolate Chunkers. Sorry for the mix-up. I'll just have to suffer the punishment of making the actual recipe someday.


Chocolate Chunkers
(recipe from Dorie Greenspan's book, Baking:From My Home to Yours)

Ingredients
1/3 cup all purpose flour
¼ cup unsweetened cocoa powder
½ tsp. salt
¼ tsp. baking powder
3 tablespoon unsalted butter – cut into pieces
6 oz. bittersweet chocolate, coarsely chopped
2 large eggs (at room temperature)
2/3 cup sugar
1 tsp. vanilla extract
6 oz. semisweet chocolate, chopped
6 oz. white chocolate chopped (I used dark)
1 ½ coarsely chopped nuts ( I used almonds)
1 cup dark or golden raisins, plump dried apricots, or another dried fruit that you like.

Method

Center rack in the oven and preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicon mats.

Sift together flour, cocoa, salt and baking powder. Melt butter with unsweetened and bittersweet chocolate in a heatproof bowl over a saucepan of simmering water. The chocolate should be smooth and shiny. Set on counter to cool.

Beat eggs and sugar on medium high speed until mixture is pale and foamy. Reduce speed, add vanilla. Then add cooled melted chocolate, and mix only until incorporated. Add dry ingredients. Do not over mix. Dough will be thick and shiny.

Add semisweet and white (or dark) chocolate chunks, nuts, and raisins. Drop dough onto baking sheets, making each cookie about the size of a golf ball. Leave an inch between dough. Bake for 10-12 minutes, Mine were ready in about 7. Bake until the "tops of the cookies look a little dry."
Cool cookies.

Makes about 40 cookies

  5. Gjeig djg e mei gieml! Oops... let me get my lenses in (I'm just as bad). Great post - and GREAT cookies. Now I have to make these as well.... they look phenomenal. Glad you enjoyed them and previewed them (at least for me) - you'll love the Chockablock Cookies - and actually, I made "Cream Scones" for last week, then realized is was "Sweet Cream Biscuits"... hm

  12. Hi Avanika. It was changed maybe just a little over a month ago, so it hasn't been that long. :)
    If you are using Blogger, log in and just click on 'Layout'. In the upper-left area of the screen, just under 'View Blog' there is should be something that says 'Pick new Template'. Click on that and you can choose from about 16 different themes. All your information will be saved but you can play around with the colours and fonts.

    They remind me of the breakfast cookies I make, no chocolate though.

  16. Hey at least it was a tasty mistake. You can't go wrong with those chocolate chunkers! I hope you try this weeks recipe too..they were so yummy! I added a bag of trail mix to mine and fell in love!
