This week's Tuesdays with Dorie recipe was hosted by the lovely Jasmine, of Jasmine Cuisine. She chose peanut butter crisscrosses. Because I'm a peanut butter addict, I had already made that particular recipe several times. And due my constant need to try various incarnations of peanut butter, I decided to bake/devour these peanut butter oatmeal chocolate chip cookies instead.

I can honestly say; these are the best peanut butter cookies I have ever had. Please don't get me wrong, the crisscrosses are stellar, and they are the ideal recipe for classic peanut butter cookies. But these p.b. oatmeal darlings pull out all the stops and leave you craving cookie after cookie...after cookie, until finally you think you're going to die of a peanut butter bliss overload.

These are the the kind of cookies that you will crave at any random moment. I was hit with an overwhelming urge to bite into one while I was waiting at an intersection. It wasn't even a stressful situation. All of a sudden I just really, really wanted to taste their moist, crumbly, nubbly texture.

The recipe bridges that sometimes precarious gap between the chewiness of chocolate chip cookies and the pebbly crumb of peanut butter cookies. These are not oatmeal cookies, the oatmeal is more of a moderator than an instigator; it merely lends its hearty flavour without being too intrusive. Thank you, oatmeal.

Peanut Butter-Oatmeal Chocolate Chip Cookies
adapted from Brown Eyed Baker

Ingredients
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt + extra for sprinkling
1/4 teaspoon of ground cinnamon
1 stick (1/2 cup) unsalted butter, at room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup light brown sugar
1/2 teaspoon vanilla extract
1 egg, at room temperature
1/2 cup rolled oats
1 cup bittersweet or dark chocolate chips (I used Ghiradelli's 60% cacao chips)

Method
Whisk together the flour, baking soda, salt and cinnamon. Set aside.

On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour mixture until just combined. Using a large spatula or wooden spoon, stir in the oats, and then the chocolate chips. Cover and chill for at least 3 hours.

Preheat the oven to 350 F. Line baking sheets with parchment paper.

Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Lightly sprinkle each cookie with salt. Bake for 10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature.

Makes only about 16 cookies (you may want to double this one!).

  6. Wow, these are beautiful cookies, Valerie. I just felt my tongue involuntary move in an odd fashion when I saw the top photo. They look really good. Plus, I love that peanut butter and oatmeal are in there-super yum!
    Oh, and you always make the best looking cookies. Mine are never the same size. Do you use a scooper or some type of tool to ensure roundness and such?
    p.s.-I don't know where the summer went either (smile)...

    I like Dorie's a lot but these are two very different cookies so I can like both of them.

    I'm quite neurotic about my cookies. Usually I use a level Tablespoon (or 2) but sometimes chunky ingredients can throw off the accuracy, if that's the case I use a trusted scale and weigh each ball of dough.

  21. I made these yesterday as they've been on my list for a while... They turned out just as you said - but maybe a bit more on the crumbly peanut butter cookie side. Is there any modification I could make to make them more moist? I plan to try your colossal chocolate chip cookies next... yum!

    If you want a bit more chew, maybe the next time you could try reducing the amount of flour by about 2 tablespoons and increasing the peanut butter to a 'heaping' 1/2 cup? I don't know if that will work...I think you'll find that the colossal chocolate chip cookies will deliver all the chewiness that you're looking for. :D

  25. Recipe sounds great! Have you tried with natural peanut butter? I use a creamy natural PB that doesn't require stirring. I was wondering if you think it would turn out ok. thanks!

    1. As long as there's no oil collected at the top (and the peanut butter's texture resembles normal pb), I think it will work in the recipe. Please don't throw things at me if I'm wrong. :-)
