Tuesdays with Dorie: Translucent Maple Tuiles

During visits to relatives in Avignon as a child, if I'd had even the slightest inkling that their rooftop tiles inspired these cookies, I would have been climbing up the walls like a monkey and clinging to the eaves like a famished koala bear (you should see the way I've learned to scamper up my mom's high-shelved farmers cabinets in search of a rogue tart pan.)

This week's Tuesdays with Dorie recipe was chosen by Hindy, of Bubie's Little Baker. And what a lovely selection it was! The name of these delicate cookies was inspired by the tiles which line the rooftops of homes in Provence.



These cookies were easy to put together, but a bit fussy to bake. They're basically made with maple syrup, butter, and sugar, with just enough flour to make sure that everyone is getting along. The difficult part, aside from resisting the urge to eat all the dough, is removing them from the cookie sheets. It took me a few tries to master the technique. You kind of have to use a festina lente approach, and scoop/scrape in a swiftly gentle motion while the cookies are still warm from the oven. The cookies bake up so beautifully, each with a honeycomb design, that even those that didn't make it off the sheet in one piece are gorgeous enough to serve proudly.

    yes, you're right that we shouldn't bake together, in case of disaster, but the f/v Northwestern kitchen is too small for the two of us anyway.

  7. These look beautiful. They remind me of lacy cookies which I love, but can't find outside of NYC. :( I don't think I have the gentle touch needed to make these cookies. Great job!
