Tuesdays with Dorie: Tortley Apple-Pear Tart

When I first started this food blog, I remember reading somewhere that the word 'delicious' is too common and can become redundant in a food blog. For a while I avoided using it for fear of sounding common and redundant. But I soon became sick of prancing around what I was trying to grasp at with flowery adjectives. So yes, I'm using the word delicious when it's deemed fit. And to cut to the chase, this tart is delicious. It doesn't matter what season is marked on the calendar, apples are always a welcome ingredient in any dessert. And since the cold weather still has an iron grip on poor little Spring, I was more than happy to make a cozy apple tart.



In case I haven't already stated this in several Tuesdays with Dorie posts, I'm so in love with her tart crusts. They actually remind me more of ginormous cookies than actual crusts. This particular tart called for Dorie's nut-infused version of her classic sweet tart recipe, and it was a double crust (i.e. it had a roof!). I used a mixture of almond meal ( since it is basically ground almonds), and chopped pecans. The result was just down-right scrumptious! Honestly, I could have devoured the crust without any of the equally scrumptious (but in a different way,) filling. Dorie's crusts literally melt in your mouth, and with all the nuts added to this one, the richness was even more intense. Sheer bliss, packaged in a pretty-edged circle of joy. Oh, and the filling was great too. The apples (and pears, if you're using them), are cooked down to an almost applesauce consistency. What's more comforting on a cold spring day than applesauce? The mixture is then baked between the layers of happy crust until it turns golden brown. I confess that I may have enjoyed more than half the tart before realizing that it is indeed spring, and t-shirt weather is just around the corner. Oops. :D

  6. What a beautiful tart top...mine was so plain and I didn't think to do anything special with it like you did...makes all the difference! Also love the beautiful quilted linen your plate rests on...very pretty. This was good....I know, I know, everyone loves Dorie's tart crust and while I like the taste of it, I cannot get it to handle well for me. It always falls this way and that and breaks...yours looks perfect.

  8. i agree, this is delicious!! and dorie's crust is TO DIE FOR. my mom hates the thick crusts on store bought tarts but when i make them (and use this very recipe) my mom notes "extra thick crust please!" that's how i know it's a winner! i'm SO glad you enjoyed this. i always love visiting your gorgeous blog!

  12. You know, I agree. Delicious! Who cares about all the blog mumbo jumbo anyway. Just be yourself and "delicious" is a lovely word. Dorie's tarts are lovely and delicious as well. Your tart is beautiful! Probably the most I've seen . Wowza!

  15. Delicious, delicious, delicious! Have I used up my quota of that word for the year? There's no other way to say it, Valerie! It looks amazing--love the circle cut-outs. I'll definitely be making this when I get home. Winter is apparently never going to end here either.
