Tuesdays with Dorie: Bittersweet Brownies

Even though I may not watch the grass grow, or a pot of water come to a boil, I am obsessed with peeking staring at food as it's baking in the oven. (I don't sit in front of the oven with a mojito and a bowl of popcorn...that would be silly. I just like to look through the glass every 3-5 minutes.)

Pies are a bit boring to watch because they have no real story to tell. But brownies transform from a luxuriously deep chocolate batter to an equally luxurious crackly-topped, fudgy deity. Brownies speak to me. They tell me when they're ready to be removed from the oven. Cakes...well let's just say that we're still working through some sticky issues.

There are so many brownie recipes in Dorie Greenspan's book, and yet each has it's own unique, irresistible charm. Just as the title indicates, these svelte brownies are intense, deep, and sophisticated. A milk-filled wine glass is a must for this recipe.

It's hard to believe, but this is the last brownie recipe for Tuesdays with Dorie...the bittersweet title appropriate in more ways than one. Luckily we still have a few more weeks left before the final, Final recipe. It's been an amazing run so far, and I almost wish that there was a hidden "Harry Potter"-style chapter somewhere.

  7. I love the look of your brownies - so deep and dark and fudgy. I kinda like watching things bake too - I turn the oven light on and off to facilitate watching cakes rise.
